Holy cow! Yesterday, we celebrated 1,000 followers on our blog! Thank you for dropping by the website, and thanks for coming by the house for some great food! Here’s what we’ve got cooking for you as the week races to the finish: spaghetti and house-made meatballs and shrimp with creamy or crispy grits.

Thursday, June 16

Spaghetti with fresh marinara sauce and meatballs. Yes, it’s the old stand-by, but ours contains homemade marinara sauce and hand-patted meatballs served over piping hot pasta, and it’s just the right kind of pastalicious serving that makes life a little better as you head toward the weekend. Well, it’s mosquito season again — ugh! But, you may not know the lowly Aedes aegypti fought in the Revolutionary War. Yep. General Lord Cornwallis’ troops literally had the blood and life sucked from them as they struggled to fight the Americans in the south. Not used to the humid conditions and malaria, the English fell prey to our secret weapon: the mosquito. Hey, you can’t make this stuff up. Spaghetti, meatballs, and a victorious American army. Sounds great — except for that mosquito business.

Friday, June 17

Shrimptastic Friday: Shrimp and grits ($15). Shrimptastic Friday: Shrimp on baked garlic cheese grits (crispy or baked), $15. Shrimp lovingly cooked with chopped veggies in a delicious sauce served over baked garlic cheese grits (either crispy or baked) will make you toot your horns up and down the street. On this day way back in 1884 on a place called Konijn Eilandt (“Rabbit Island”) by the Dutch settlers, the first roller coaster in America opened. Blazing over the tracks at a blistering six miles per hour, the “switchback railway” brainchild of LaMarcus Thompson soon became a huge attraction paving the way for a major coastal tourist attraction to develop as it entered the 20th century. We know the place as Coney Island, famous for hot dogs, racetracks, beaches, and boardwalks. And, in case you’re wondering, that slow start to roller coasters now finds the world’s fastest roller coaster, the Kingda Ka in Jackson, New Jersey, flying at about 128 mph. Well, our shrimp and grits will return us to a slower, lazier day of watching the rabbits frolic in the leafy glades.

June 14, 2016 Weekly Menu

Frank Sinatra sang it so well, “I like New York in June, how about you? I like a Gershwin tune, how about you? I love a fireside when a storm is due; I like potato chips, moonlight, motor trips, how about you?” Well, New York in June felt lovely and wonderful, but we’re glad to return to the house for some good, home-cooked food. Here’s what we’ve got cooking for you this week: Louisiana red beans and rice, brisket tacos, spaghetti and house-made meatballs, and shrimp and grits.

Tuesday, June 14

Special made Louisiana red beans and rice with hot water cornbread and house salad. Our red beans come fully and deeply flavored, cooked in our own house-made smoked ham hock stock that will totally set the week in motion. Someone once wrote, “Chocolate is made from beans. Coffee is made from beans. Beans are vegetables. Have you had your vegetables today?” Well, human folk have loved beans for millennia, literally. The oldest domesticated beans discovered come from the Guitarerro Cave archaeological site in Peru, dating to the second millennium B.C. Yep. So, have some beans today, you’ll feel archaeologically healthy.

Wednesday, June 15

Brisket tacos, charro black beans, cilantro lime slaw, and fresh salsa. Our overnight brisket chopped and served on lightly fried corn tortillas with charro black beans, lime cilantro slaw, and fresh salsa will help you rethink the traditional taco. Our funny friend Jeff Foxworthy says, “You might be a redneck if you think beef jerky and Moon Pies are two of the major food groups.” We’ll be providing one of the two food groups this Wednesday because we are all about healthy eating.

Our great good friend Bill Waterston writes this conversation in Calvin and Hobbes: “When a kid grows up, he has to be something. He can’t just stay the way he is,” Calvin observes. “But a tiger grows up and stays a tiger why is that?” Hobbes simply replies, “No room for improvement.” “Of all the luck, my parents had to be humans,” Calvin whines. “Don’t take it too hard,” Hobbes smirks, “Humans provide some very important protein.” Hey, we’ve got some very important protein for you this Friday — and it comes with a heapin’ helpin’ of love called grits. Chicken carbonara bake with house salad and house-made bread. Deliciously baked in the oven, we have bow tie pasta swimming in a creamy white sauce with lots of fine friends — oven-roasted chicken breast, mushrooms, garden fresh veggies, and green onions. Oh, and by the way, a classic carbonara has some bacon added. Yep. You won’t want to miss this goodness! Katrina and the Waves had a huge hit with “Walking on Sunshine” and its crazy upbeat melody, but did you know our old friend Dolly Parton did a remake? Yep. Here’s the Katrina and the Waves singing, but for a little different take, try Dolly’s bluegrass style rendition. Join us for some chicken carbonara bake, and you’ll be walking on sunshine as you head into the summer.

Shrimptastic Friday: Shrimp étouffée with rice ($15). Shrimp lovingly cooked with the tasty trinity veggies in a light roux with lots of parsley, and delectable Cajun spices in a delicious sauce served over Louisiana rice will make you boogie up and down the street. G.K. Chesterton notes, “Let a man walk ten miles steadily on a hot summer’s day along a dusty English road, and he will soon discover why beer was invented.” What else can we say?

House-made hamburgers on jalapeño buns with all the trimmings. Well, what’s better than home-made hamburgers, jalapeño buns, lots of trimmings? Nothing. Matthew McConaughey candidly offers, “Man who invented the hamburger was smart; man who invented the cheeseburger was a genius.” Yep. These burgers are definitely genius, and they will totally home-make your week. Who knows? Ole Matt might just show at the table for some hamburger grub.

Shrimp pasta primavera with angel hair pasta ($15.00). Well, take some gulf shrimp, add some some fresh veggies with a delicious sauce, and lightly sauté it with angel hair pasta, and voilá, you’ve got a great dish to help you start the weekend just little bit early. Well, the songwriters Irwin Levine and L. Russell Brown found inspiration in the story of a Union soldier returning home after the Civil War, wondering if he’d still be remembered, still be loved. In 1973, Tony Orlando and Dawn turned the song into a number one hit that, believe or don’t, ranks as 37th in the top pop songs ever by Billboard magazine. Blackened catfish tacos with Spanish rice, charro beans, and fresh salsas ($13.50).  We season the catfish like our old friend Chef Paul Prudhomme, blacken them in a white hot cast iron skillet, lightly fry some corn tortillas, put it all together, and add a little lime cilantro slaw. With a little green salsa and fresh tomato salsa, you’ve got some goody that will make some surprisingly good grub. The Babe shared with us his philosophy for hitting (and for life), “How to hit home runs: I swing as hard as I can, and I try to swing right through the ball….The harder you grip the bat, the more you can swing it through the ball, and the farther the ball will go. I swing big, with everything I’ve got. I hit big or I miss big. I like to live as big as I can.” Hey, these catfish tacos will absolutely help you hit a few homers late in the game and live big, real big.

Shrimp pasta primavera with angel hair pasta ($15.00). Well, take some gulf shrimp, add some some fresh veggies with a delicious sauce, and lightly sauté it with angel hair pasta, and voilá, you’ve got a great dish to help you start the weekend just little bit early. Well, George Herman Ruth grew up playing ball in Baltimore at a Catholic school called St. Mary’s Industrial. A standout athlete, he was drafted by a minor league team called the Baltimore Orioles, then part of the Boston Red Sox organization. Just a boy-faced teen at the time, everyone called him “Babe.” Eventually, he pitched left-handed for the Red Sox before being traded to the New York Yankees (thus starting “the curse of the Bambino” which kept the Sox from winning the pennant until 2004). Well, the rest is baseball history: 22 seasons, 10 world series wins, and 714  home runs. And, yes, the power behind The Babe was pasta. He loved shrimp primavera pasta. Who knew?

Tuesday, May 24

Chicken and sausage gumbo. We make our gumbo with a dark roux, chicken, sausage, and the trinity of bell pepper, onion, and celery. Oh, Grandpa Justin would add sauterne wine, a cup or two or three, and so do we. Add a little Louisiana grown rice, and you’ve got the recipe for a happy dance at the lunch table. Just don’t go overboard, it’s early in the week. The old saw, “Money makes the world go round” sounds so much better as “Gumbo makes the world go round.” We like Dire Straits take on the matter, “Gumbo for nothing and your chicks for free, gumbo for nothing and chicks for free.” We can almost hear Sting singing in the background, “I want my, I want my, I want my okra please.” Yep. Gumbo.

Wednesday, May 25

Pulled pork sandwiches with apple slaw on Gambino’s po-boy bread. Slow cooked pork, pulled to tender pieces, house made barbecue sauce, and jalapeño mayonnaise topped with our tart apple slaw on Gambino’s po-boy bread form a porkalicious sandwich that simply makes your week better by helping you slide faster into the weekend. Our silly friend Rodney Dangerfield remarked one time, “I looked up my family tree and found out I was the sap.” Well, Rodney, sorry. Come by for a pulled pork sandwich, it can redefine your place in the old family tree.

Ever the sarcastic one, P.G. Wodehouse quipped, “Why don’t you get a haircut? You look like a chrysanthemum.” This shrimpy primavera goodness just might do something fancy to your hair. Come by for a looksee, we’ll bring the food and the mirror.

Roasted chicken breast with fresh tomato sauce over crispy polenta with savory-sweet green beans. Wonderfully seasoned and roasted chicken breast tops a crispy polenta cake with fresh tomato sauce, and it comes with our savory-sweet green beans, house bread, and house salad. Roy Orbison notes, “I may be a living legend, but that sure don’t help when I’ve got to change a flat tire.” Yes, most of us are humbled before the difficulties of operating a car. This polenta, though, will make you famous and smart (and you can wear cool glasses like Roy), and it just might help you change a tire. Yep.

Shrimptastic Friday: Barbecued shrimp stuffed po-boys or fried green tomato and shrimp po-boys with house-made remoulade sauce. Take a half-size po-boy, hollow the bread to make a bread cave, stuff it with our own New Orleans style barbecued shrimp (prepped in loads of butter, white wine, and saucy spices), cover it with barbecue sauce, and grab the napkins. Or grab our fried green tomatoes, add some shrimp sautéed in our barbecue sauce, our house salad with house-made dressing, some remoulade sauce, and you’ve got a little more than a po-boy, you’ve got a “Whoa-boy.” Pete Hegseth shares, “Memorial Day isn’t just about honoring veterans, its honoring those who lost their lives. Veterans had the fortune of coming home. For us, that’s a reminder of when we come home we still have a responsibility to serve. It’s a continuation of service that honors our country and those who fell defending it.” Have a blessed weekend, remembering those who’ve served our country so well, especially those  who didn’t come home and their families.

Screaming around town in a 1966 convertible Ford Thunderbird, Thelma and Louise have arrived — in a chick-flick road warrior kind of way. They want the brisket, and they’ll break the law just to get what they want. Well, we ain’t breaking no laws, but here’s what’s cooking for you this week: Fried pork chops with rice pilaf, overnight brisket with signature potatoes, roasted chicken breast over crispy polenta with fresh tomato sauce, and a shrimptastic po-boy Friday.

Tuesday, May 24

Fried pork chops with rice pilaf and fresh vegetable medley. Blissfully slumbering overnight in a special saucy boudoir of buttermilk and seasonings, these pork chops will ceremoniously swim with their special flour bathing suits in a big pot of hot and lovely grease, and they come served with blissful sides of rice pilaf and a fresh vegetable medley. Way back in 1991, Thelma and Louise premiered in theaters on this day to rave reviews as these mistreated heroines dispensed their own kind of justice as they cruised in a 1966 Ford Thunderbird convertible. Yep, it’s a chick-flick road movie in the vein of Easy Rider or Bonnie and Clyde. And, thanks to these crusading ladies, we got introduced to a juicy little pork chop named Brad Pitt. Come by for a ride in a Ford Thunderbird convertible, Brad might just be in town. But, if he’s not, we’ll bet these pork chops will do.

Wednesday, May 25

Overnight brisket with signature potatoes and roasted broccoli. The stuff of legends, our overnight brisket, slow-cooked in a special blend of garlic, onions, spices and dark beer, will cheer your tummy and your table. Elizabeth Hurley candidly admits, “I’ve always been obsessed by beef jerky.” Yes, and we’re certainly glad. Our old friend Orson Wells explains why we’re glad: “If there hadn’t been women we’d still be squatting in a cave eating raw meat, because we made civilization in order to impress our girlfriends.” Beef, the real motivator behind civilization. Come get civilized this week with some of our overnight brisket, Orson and Elizabeth will be here. And so will Rosebud.

Roasted chicken breast with fresh tomato sauce over crispy polenta with savory-sweet green beans. Wonderfully seasoned and roasted chicken breast tops a crispy polenta cake with fresh tomato sauce, and it comes with our savory-sweet green beans, house bread, and house salad. Famous London Chef Yotam Ottolenghi remarks, “Polenta is to northern Italy what bread is to Tuscany, what pasta is to Emilia-Romagna and what rice is to the Veneto: easy to make, hungry to absorb other flavours, and hugely versatile.” Easy, absorbent, and versatile sound like great ways to describe a food…or a paper towel. This chicken and polenta with tomato sauce will make you feel homey, full, and blessed. Now, that sounds like some good food to get you ready for a big holiday weekend.

Shrimptastic Friday: Barbecued shrimp stuffed po-boys or fried green tomato and shrimp po-boys with house-made remoulade sauce. Take a half-size po-boy, hollow the bread to make a bread cave, stuff it with our own New Orleans style barbecued shrimp (prepped in loads of butter, white wine, and saucy spices), cover it with barbecue sauce, and grab the napkins. Or grab our fried green tomatoes, add some shrimp sautéed in our barbecue sauce, our house salad with house-made dressing, some remoulade sauce, and you’ve got a little more than a po-boy, you’ve got a “Whoa-boy.” Well, someone once said, “There is nothing that a po-boy can’t fix.” What else can we say as we head into the holiday weekend?

Here’s what’s cooking for you heading into the weekend: grits and grillades and a fantastic Friday with blackened catfish over dirty rice.

Thursday, May 19

Grits and grillades. Our lovingly cooked pork loin medallions rest atop baked garlic cheese grits covered with a sumptuous tomato gravy. The band, ever-fighting, found itself in the quits. Then, parked in the wrong place near Buckingham Palace, his car — an old Packard hearse for which he’d paid £30 — had been towed because the Queen Mother felt it reminded her of her late husband. The Metro police wanted £250 just to get it from the tow yard. Yes, dear friends, Pete Townsend hit a very low place that terrible day in May. So, he penned “My Grits and Grillades” on May 19 as he celebrated, in a lowly and sad way, his 20th birthday. Nooooo, it’s really “My Generation,” and it helped the band repair the breach long enough to make that song the tune of a generation and formed the launching pad for one of the greatest bands of the 2oth century. And, yes the bit about the hearse and the Queen Mother is true. “Talkin’ ’bout my grits and grillades” has a catchy feel, though. Right?

Friday, May 20

Blackened catfish with a beurre blanc crabmeat sauce, dirty rice, and house bread, ($15). Seasoned like our old friend Chef Paul Prudhomme, we blacken the catfish in a white hot cast iron skillet, serve it atop dirty rice, add a little buerre blanc, and put a little house bread on the side. Yummy. Well, in writing for Tommy the boys wanted to pay homage to some of their jazz and blues influences, so they composed a little ditty called “Catfish Wizard” about an old guitar bluesman who caught lots of catfish way down Mississippi way. Only problem, they didn’t know a thing about catfish. But, apparently, they knew lots about “that deaf, dumb, blind kid [who] sure plays a mean pinball.” Go figure. There’s wizardry happening on the stove this Friday, and it just might make you feel like smashing a guitar at the end of the meal.
