We’d love to cook some things for your table over the Memorial Day weekend so you can have a wonderful time with your family. We’ll be offering overnight brisket, pulled pork, potato salad, biscuits, bread, and several desserts.

Truly, this weekend gives an opportunity to remember at the table those who gave so much so we can sit at the table in freedom — living, laughing, loving, and remembering.

What We’re Cooking for You This Week

Tuesday, May 19

Chicken fried steak, mama’s rice, roasted garden-fresh squash, & buttermilk honey biscuits. These lovely steaks will tranquilly rest overnight in silky sheets of  buttermilk and seasonings before being fittingly fried in a special flour recipe and served with mama’s rice. Mama’s rice proudly stands as it’s own food group. Sergeant Alvin C. York subsisted on mama’s rice which he formed into patties to keep in his knapsack before he battled in France. They fueled his furious charge on the fields near Decauville when he almost single-handedly defeated an overwhelming German force. Of course, Sergeant York won the Congressional Medal of Honor well before mama was born, but it makes a good story anyway. And, mama’s rice will make you brave and strong. Indeed.

Wednesday, May 20

 Pulled pork sandwiches with jalapeño mayonnaise and apple cole slaw. Slow cooked pork, pulled to tender pieces, house made barbecue sauce, and jalapeño mayonnaise form a delicious meal that makes everything breezy and better. General Dwight D. Eisenhower ordered these deliciously messy sandwiches while “officed” in a cave on Gibraltar during the last days of the north African campaign — these “sammiches” (as he affectionately called them) and piles of cigarettes helped him stomach the dank atmosphere under the rock. Of course, if he’d been from Louisiana and not Abilene, Kansas, he could’ve just had a beach-side couchon de lait.

Thursday, May 21

Creamy pesto chicken fettuccine, garnished with a roasted cherry tomato, a house salad, and garlic bread. Fresh basil, olive oil, pine nuts, and seasonings make a light pesto sauce served on fettuccine pasta with grilled chicken. Minus the chicken, this pasta helped the 442nd Infantry Regiment fight famous battles like Anzio and Monte Cassino and made them the most decorated regiment for size and length of service in American military history. Yep, it was the pesto sauce given to American troops that helped save the Italian campaign — and everybody thought it was Generals Patton and Montgomery. Who knew?

Friday, May 22 — Salmon & Shrimp Woohoo!

Salmon croquettes with an artichoke cream sauce and roasted vegetable medley of broccoli, carrots, squash, and sweet peppers. Alright, what feels better than specially made patties of pan-fried salmon? Not many folks remember when the Japanese invaded Attu Island in the Aleutian chain off Alaska. This hard fought battle, leading eventually to an American victory, finds itself overshadowed by the events at another little island battle called Guadalcanal. Believe it or don’t, B-rations made the difference for these folks as they fought and froze for a forgotten piece of land — they just wish they’d had these salmon croquettes.

Barbecued shrimp stuffed po-boy and a house salad.  Take a half-size po-boy, hollow the bread, stuff it with our own New Orleans style barbecued shrimp (prepped in loads of butter, white wine, and saucy spices), cover it with barbecue sauce, and grab the napkins. Well, General Douglas MacArthur returned with many brave soldiers and sailors to the Philippines to liberate all kinds of folks, but most don’t know there was a secret, but small reason: the general loved Manny’s Special Barbecue Shrimp served at a local Manila joint called Manuel’s Ang Palaka (Manuel’s “Big Frog”) with holes in the roof, rats in the kitchen, and rough waitresses. Yep. They called him “General Papito,” and, they let him smoke his pipe after dinner.

Dessert Offerings This Week

Lemon delight. Light, refreshing, and so delightful you’ll be singing with Ella Fitzgerald: “So please be sweet, my chickadee, and when I [eat] ya, just say to me, it’s delightful, it’s delicious, it’s delectable, it’s delirious, it’s dilemma, it’s de limit, it’s deluxe, it’s de-lovely.” Too bad Cole Porter’s not around to hear people singing his song on the streets of Rayville after having this dessert.

White chocolate bread pudding with raspberries and blueberries. Orson Welles originally had Charles Foster Kane gasp, “Bread pudding” on his death bed at the end of Citizen Kane, but folks at the studio thought it was too arcane or abstruse, so he just said an unscripted, “Rosebud.” 

Carrot cake with fresh carrots and dried cranberries. Elmer Fudd with his hornéd helmet and Bugs Bunny with braided, blond locks sang about this cake on Saturday morning. That is, until Elmer “killed the wabbit.” Good thing it was just a cartoon killing and the cake was available for the actors backstage. Bugs liked his served with extra icing.

Lavender scones with either lemon curd or strawberry shortcake. Monty Python’s Blancmange invaded the planet, trying to eat all the lavender scones and turning folks into Scotsmen. Thankfully, some intrepid folks named Mr. & Mrs. Samuel Brainsample stopped the Blancmange so we could have scones and tea. Really happened. 

Chocolate chip scones. These are not the high energy, temperature tough, and “taste a little better than a boiled potato” D-rations chocolate bars of World War II. Those “chocolate” bars meant to provide a soldier 1800 calories of “sustenance” in combat situations. Our scones taste way better than a boiled potato, and they definitely do not contain 1800 calories. They will energize you for an afternoon of work, though, especially with a little chocolate sauce lovingly drizzled across the top.

Please take a moment this week to remember those veterans who served and sacrificed for our freedoms! Freedom stands not just as a right, but a responsibility.

 We count ourselves truly blessed because so many folks choose Stone House Eats for catering and lunches. Our business continues to grow, and we find the need to hire new folks (yea!) and train those folks (yea!). Sadly, we need to close on Friday, May 15 so we can work to serve you better. Thank you for your generosity and faithfulness in coming by the house to join us at the table, we are so thankful to be part of your lives. What We’re Cooking for You This Week

Tuesday, May 12

Fried pork chops, smashed potatoes, roasted garden-fresh vegetables, & buttermilk honey biscuits. These pork chops will slumber overnight in a special saucy boudoir of  buttermilk and seasonings before being ceremoniously fried in a special flour recipe and served with smashed potatoes (i.e., baked and beaten) and flaky buttermilk honey biscuits. Captain Kangaroo and Mr. Green Jeans ate this for breakfast before entertaining zillions of kids, including most of us — that’s why they lasted on TV for almost 30 years. Who knew fried pig equals long life (at least it works on TV)?

Wednesday, May 13 — Today’s Special $15

 Crawfish étouffée served on fried grits. Take the trinity of Cajun cooking (bell pepper, onion, and celery), add a few fresh tomatoes, garlic, and lots of fresh parsley, and then throw in the mud bugs — it’s a zydeco dance party in the pan! Believe it or don’t, you can totally fry grits, and once you’ve had them, you’ll never want regular grits again. Fried pork yesterday plus fried grits today equals a trip to the cardiologist tomorrow (it’s a small twist on the old saw, “An apple a day keeps the doctor away”).

Thursday, May 14

Chicken carbonara, house salad, and house bread. Bow tie pasta swimming in a creamy white sauce with lots of good friends — oven-roasted chicken breast, mushrooms, fresh tomatoes, and green onions. Well, this meal is well-dressed enough to merit a visit from “Bond, James Bond,” and he’s wearing a dinner jacket. Sorry, we have no Bond girls today — and nothing shaken or stirred, either…well, except for your taste buds.

Friday, May 15 — Salmon & Shrimp Rodeo!

Salmon croquettes with an artichoke cream sauce and roasted fresh vegetables. Alright, what feels better than specially made patties of pan-fried salmon? Not much. And, wild caught salmon (yes, we took a trip to the northwest) prove surprisingly good for your blood. Let’s face it, after fried pork and fried grits, our cardiovascular systems need some good news. Salmon. It’s not just a paint color any more, it just might save your life.

Barbecued shrimp stuffed po-boy and a house salad.  Take a half-size po-boy, hollow the bread, stuff it with our own New Orleans style barbecued shrimp (prepped in loads of butter, white wine, and spices), cover it with barbecue sauce, and grab the napkins. From the bottom of the ocean, these shrimp are like George and Weazie, moving on up, to a deluxe appointment on your plate. They finally got a piece of the pie — then, they got eaten.

Dessert Offerings This Week

Summer pudding. Sweet bread layered with a mixed berry compote of fresh raspberries, blueberries, and strawberries. Add some sweetened whip cream or dark rum infused whip cream, and you’ll hear Sandy Olsen and Danny Zucco singing about some “summer loving.”

Lemon delight. Light, refreshing, and so delightful you’ll be singing “Afternoon Delight” with the Starland Vocal Band and the Channel Four News team in San Diego. Just don’t tell anybody what you’ve been up to.

What We’re Cooking for You This Week

Tuesday, May 5

Fried chicken tenders, signature potatoes, green beans, & honey buttermilk biscuits. Chicken tenders bedded overnight in buttermilk and hot sauce come fried in a special flour recipe and served with the old southern standbys of our signature white-gravy potatoes, green beans, and flaky honey buttermilk biscuits. Crispy on the outside, tender on the inside, and just the right blend of seasonings make all things delightful. Oddly enough, that also describes a long day at the beach.

Wednesday, May 6

 Overnight Brisket, au jus on Louisiana rice, a squash medley, and a rosemary garlic biscuit. Our Overnight Brisket, slow-cooked in a special blend of spices and dark beer, will cheer your tummy and your table. Add some home grown Louisiana rice, a squash medley of zucchini and calabacita, and a rosemary garlic biscuit. Grandma called, and she’s expecting you to come by her house after church for brisket. Don’t forget, she texted your mom to bring the dark rum for her famous rum cake.

Thursday, May 7

Stuffed cannelloni with spinach, ricotta, and Italian sausage. We’ll stuff these little cannelloni (which we make fresh) with a mixture of spinach, Italian sausage, our own house made ricotta, and cover them in a dreamy, creamy alfredo sauce. On the side, we’ll have roasted celery. “Cercare il pelo nell’ uovo,” means “To seek the hair in the egg.” If we were in Italy, we’d totally get it. But, since we’re not, just come by for some cannelloni. Ricotta, ricotta, ricotta — you gotta get a lotta in these lovely pasta tubes, and it just might help you understand crazy Italian sayings.

Friday, May 8 — Two Specials!

Salmon croquettes with a cream sauce and roasted fresh vegetables. We love making these salmon into patties with our own house made bread crumbs and seasonings and pan frying them to a delightfully crispy perfection — they come served in a creamy sauce with artichokes like Clélie’s grandmother Namee used to make.

Barbecued shrimp stuffed po-boy and a house salad.  Take a half-size po-boy, hollow the bread, stuff it with our own New Orleans style barbecued shrimp (prepped in loads of butter and spices), and serve it with extra napkins. It’s like a shrimp house boat floating in butter — you’ll want more than one, and you’ll want two forks to paddle it into your mouth.

Chocolate chip scones. These scones will have no English tea, they ride Harleys and wear leather. Well, sort of. You can get them strawberry shortcake style or with chocolate sauce. 

Summer pudding. Sweet breads layered with a mixed berry compote of fresh raspberries, blueberries, and strawberries. Light and beautiful like a late spring day, the summer pudding makes dreams come true. Yep.

Bombs away! Coming on Wednesday, May 6. It’s coming again: a two-layer chocolate cake with chocolate ganache and a butter cream frosting with a hint of coffee. It’s like a huge, bunker-buster chocolate bomb waiting to be dropped in your mouth. Take cover. Enough said.

What We’re Cooking for You This Week

 

Tuesday, April 28

Louisiana red beans & rice, turnip greens, and hot water cornbread. The Louisiana red beans are complimented by our own pork stock made from flying pigs — and we’ve added some flying pig hams to send these beans way into the stratosphere (by the way, they are non-gas causing beans because they come from flying pigs). The turnip greens might make your evening toot-toot-tootfully exciting, though — after all, they are toot vegetables! The hot water cornbread will make you feel like you’re on Hee-Haw, picking’ and a grinin’ with Buck Owens and Roy Clark. Be sure to bring your overalls and straw hat.

Wednesday, April 29

 Stuffed chicken thighs and stuffed squash. Our baked chicken thighs come stuffed with a mixture of our house made pimento cheese and cream cheese, topped with a creamy, light sauce, and sided by squash stuffed with a mix of squash, onions, bacon, and seasonings. Eat these, and you’ll get stuffed, too! We do rent motorized wheelbarrows if you need some help getting to your car.

Thursday, April 30

Linguini pasta topped with a fresh marinara sauce. Using extra virgin olive oil, fresh tomatoes, Italian sausage, mushrooms, and fresh Italian seasonings, we’ll make our own marinara sauce to top some wonderfully cooked linguini pasta. Sergio Leone phoned, and he needs some extras for a remake of The Good, the Bad, and the Ugly. You’ll make callback if you eat this pasta. It’s what helped Clint Eastwood handle Eli Wallach. Fresh marinara. No kidding.

What We’re Cooking for You This Week

 

Tuesday, April 21

Jambalaya with chicken, shrimp, and sausage, sided by black-eyed peas, okra, and tomatoes.  We’ll start the week with a Cajun favorite! Bust out your wash board, spoons, and Cajun French text book (they really do have those), we’re gonna sing some Zydeco music. Here’s a famous phrase: Mon père peut pas manger son gombo sans craquettes.” (My father cannot eat gumbo without crackers.) Who knew?

Wednesday, April 22 — Justin Wilson Wednesday!

 Stuffed poblano peppers topped with a strip of bacon, served with roasted potato medallions. Taking Grandpa Justin’s original recipe, we’ve added hamburger and Italian sausage with a fresh seasoning mix that includes beans, rice, and a polenta base — all inside the pepper! We garontee it’ll be good!

Thursday, April 23

Crawfish étouffée served on fried grits. Take the trinity of Cajun cooking (bell pepper, onion, and celery), add a few fresh tomatoes, garlic, and lots of fresh parsley, and then throw in the mud bugs — it’s a party in the pan! Believe it or don’t, you can totally fry grits, and once you’ve had them, you’ll never want regular grits again.

Dessert Offerings This Week

Caramel banana pie with fresh bananas, freshly made caramel, graham cracker crust, and a lightly sweetened meringue on top. You’ll feel like Holly Golightly has invited you by for some raucous fun in her tee-niny apartment — she won’t have any pie, though (which means more for you). How do you think she stays so thin?
