Chicken, shrimp, and andouille sausage jambalaya. Well, Cajun calling! What’s better than a delicious, hearty mix of chicken, shrimp, andouille sausage, rice, and tasty goodies? Way back in 1975 a German group called the Silver Convention debuted a stellar disco song that had only eight, count them, eight words. You may have already guessed it: “Fly, Robin, Fly.” It was the first number one hit from a German group on the Billboard charts. What’s little known, though, is that one of the two composers (Sylvester Levay and Stephan Prager) had a boyhood friend they called Shrimpy (mickrig in German). “Fly, Mickrig, Fly” as a way of poking fun, didn’t have the right ring. Good thing they had another friend nick-named Rotkehlchen (because he liked Batman). You guessed it, “Robin.” Well, “Fly, Rotkehlchen, Fly” didn’t have the right feel, so they opted for the English. Hey, dance the rest of the week away, jambalaya is on the way.

Fantastic Thursday: Shrimp with creamy or fried grits ($15). Shrimp on baked garlic cheese grits (crispy or baked). Shrimp lovingly cooked with chopped veggies in a delicious sauce served over baked garlic cheese grits (either crispy or baked) will make you toot your horns up and down the street. Just one more tidbit of information about the Silver Convention. Truth is, Levay and Prager really wanted to call the song, “Run, Rabbit, Run.” Maybe they were John Updike fans, but they chose the right words (only eight), and with some string synth, a 4/4 beat, and a few horns thrown in the mix, they created a disco legend, “Fly, robin, fly! Up, up to the sky!” Come join us for some wonderful food, we’d love to see you!

Drum soft tacos with Spanish rice, charro black beans and fresh salsa. Our drum tacos are freshly made with drum redfish on a fresh soft taco with a delightful cabbage slaw, and they come with our delicious Spanish ride, charro black beans, and fresh house-made salsa. Fajitas originated on Rio Grande Valley ranches employing Mexican vaqueros who received part of their pay in the throwaway cuts of beef, e.g. the head (barbacoa de cabeza), the tripe (menudo), and the faja, the “belt” or “girdle” — what most call the skirt steak (arracheras). Picked up by the enterprising Sonny Falcon in the late 1960’s, fajitas as grilled skirt steak served on soft tacos with all the trimmings began making their way into the mainstream of Tex-Mex food. Fajitas appeared on the menu at Ninfa’s in Houston about 1973 as tacos al carbon (eventually being called tacos a la Ninfa), and the tasty dish helped the Austin Hyatt Regency become the highest grossing Hyatt restaurant as Chef George Weidmann served what he called “sizzling fajitas” on hot cast iron platters. Now, skirt steak, once a throwaway piece of beef, stands as one of the most popular cuts of beef — and it all started as a way of paying Mexican cowboys on the border of Texas. You never know what you’ll find when you look into the history of a dish. Well, you’ll find our very own version of chicken fajitas served on fresh soft tacos a delicious way to get the week going.

Chicken, shrimp, and andouille sausage jambalaya. Well, Cajun calling! What’s better than a delicious, hearty mix of chicken, shrimp, andouille sausage, rice, and tasty goodies? Neil Diamond sings a fun tune called “Tennessee Moon” where we hear about old Hank Williams: “In search of a dream underneath the Tennessee moon, I fell in love with to old Hank Williams tune, and I wonder, is it the same moon Hank stood under? When he sang about Jambalaya and Being Lonesome Enough to Cry, and I can hear the echos in the sounds of his guitar,
and his words still paint a picture in my heart.” There it is, Neil Diamond singing about Hank Williams. Jambalaya has that kind of strange power. Yes, it does.

Here’s Neil singing “Tennessee Moon” at the Ryman in Nashville.

Shrimp lovingly cooked with chopped veggies in a delicious sauce served over baked garlic cheese grits (either crispy or baked) will make you toot your horns up and down the street. In the immortal film Girls! Girls! Girls! Elvis sang a ditty about a little shrimp leaving home and trying to find his way to Louisiana. Yes, he did. On a boat. With a sort of Caribbean rhythm. Have a look at “The Song of the Shrimp.” Hey, don’t miss these shrimp — Elvis is here!

How Do I Love Thee, Let Me Étouffée

Elizabeth Barrett Browning joins us this Thursday, sonnetizing about her great love for shrimp. We’ve got a great Thursday just for you, with a dose of silliness on the side! We look forward to seeing you at the table! Here’s what’s cooking for you today: shrimp étouffée.

Fantastic Thursday: Shrimp étouffée with rice ($15). Shrimp lovingly cooked with the tasty trinity veggies, a light roux, and delectable Cajun spices in a delicious sauce served over Louisiana rice will make you boogie up and down the street. Elizabeth Barrett Browing, in her famous Sonnets to the Portuguese, penned these wonderful words about one of her favorite dishes: “How to I love thee, let me étouffée. I love thee to the depth and breadth and height my spoon can reach….” Well, she changed the words so it looks more like a love poem for a person, but we know where that first draft really started — shrimp étouffée. Come join us, we’d love to see you.

Elizabeth Barrett Browning, still stuck on shrimp, once said, “If thou must love me, let it be for naught except for shrimp’s sake only.” Apparently her husband Robert loved her barbecued shrimp. Yep. Have a blessed weekend!

Happy President’s Day! Ronald Reagan once joked about Clint Eastwood’s bid to become mayor of Carmel, “What makes him think a middle-aged actor, who’s played with a chimp, could have a future in politics?” We’ve got a great week of food just for you, with a dose of silliness on the side! We look forward to seeing you at the table! Here’s what’s cooking for you this week: chicken gorditas, spaghetti with fresh marinara and meatballs, and shrimp étouffée.

What We’re Cooking for You This Week

Tuesday, February 21, 2017

Chicken gorditas with charro black beans and fresh salsa. Our gorditas are freshly made and stuffed with savory roasted chicken meat, and they come with our delicious charro black beans and fresh house-made salsa. A gordita (“chubby” in Spanish) is a corn meal tortilla made thick, grilled on a traditional comal, sliced open on one end, and stuffed with lots of goodies from meat, cheese, or vegetables to chicharrones (a spicy stew of pork rinds). Yes, it’s a little like a Mexican pita, but a whole lot more fun. Come join us at the table, we’d love to see you for some fresh gordita goodness!

Wednesday, February 22, 2017

Spaghetti with fresh marinara sauce, house-made meatballs, and house salad and bread. Yes, it’s the old stand-by, but ours contains homemade marinara sauce and a 1/3 pound hand-patted meatball served over piping hot pasta, and it’s just the right kind of pastalicious serving that makes life a little better. For another old standby, did you know lasagna had Medieval origins? Yep. The first “modern-looking” recipe comes from Naples, Italy in the Liber de Coquina (The Book of Cookery) with layers of pasta, sauces, and chopped, hard-boiled eggs. Of course, later recipes included different kinds of meat, cheeses, and vegetables. Though he loved fruit and enjoyed lots of fruit trees at the White House, John Quincy Adams never paid much attention to food. He once said, “Five small crackers and a glass of water give me a sumptuous dinner.” Boring. Maybe he should have tried an old Italian recipe for lasagna or spaghetti and meatballs, and that would have corrected his impoverished thinking.

If you can’t make it for lunch on Wednesday, just give us a call at 267-4457, we’ll set aside some supper for you of delicious of house salad, house bread, and spaghetti with fresh marinara sauce and meatballs.

Fantastic Thursday: Shrimp étouffée with rice ($15). Shrimp lovingly cooked with the tasty trinity veggies, a light roux, and delectable Cajun spices in a delicious sauce served over Louisiana rice will make you boogie up and down the street. William Henry Harrison’s presidency didn’t last but a month, so his table tastes were not well known. But, he threw great campaign feasts featuring cornbread, cheese, Burgoo (a squirrel and vegetable stew), and hard cider. In fact, the hard cider flowed so freely at campaign events, he became known as the “Hard Cider Candidate.” Well, we don’t have any Burgoo or hard cider, but we’ll just bet this étouffée will help you finish the week presidentially.

Chicken cacciatore on angel hair pasta with house bread and salad. Our chicken breast is pan-fried in butter with a crushed plum tomatoes, fresh mushrooms, and fresh red peppers sauce served on a bed angel hair pasta. On this day in 1984, Ethel Merman passed to that eternal stage in the sky. She’s remembered for her huge voice and personality, and belted out great tunes like “I’ve Got Rhythm” and “There’s No Business Like Show Business.” She loved the stage because she loved interacting with her audience. Well, come get some rhythm in your Wednesday with a little chicken cacciatore. Ethel will be here holding those long notes for which she’s so famous.

Fantastic Thursday: Lightly breaded, pan-sautéed drum, shrimp quenelle, and a creole sauce with house bread and salad ($15). We lightly bread some lovely drum, pan-sauté it, add a shrimp quenelle (a fancy French word for “dumpling”), pour a delicious creole sauce over the top, and add our own house bread and salad for a wonderful jump into the weekend. ‘Little Eddy and his mom were digging for fishing bait in the garden. Uncovering a many-legged creature, Eddy proudly dangled it before his mom. “No, honey, it won’t do for bait,” she said. “It’s not an earthworm.” “It’s not?” Eddy asked, his eyes wide. “What planet is it from?”’ We couldn’t resist a little fishing joke….

What We’re Cooking for You This Week

Tuesday, February 14, 2017

Pork and brisket quesadillas with Monterrey jack cheese, house-made adobo sauce, fresh salsa, a light salad, and charro black beans. Slow-cooked pork and brisket quesadillas with delicious adobo sauce fresh salsa, a light salad, and charro black beans are just the way to start a great Valentine’s week. George Gordon, the poet we know as Lord Byron, “Love will find a way through paths where wolves fear to prey.” Love will find a way — Pablo Cruise, Yes, and even The Lion King sang about it.

Chicken cacciatore on angel hair pasta with house bread and salad. Our chicken breast is pan-fried in butter with a crushed plum tomatoes, fresh mushrooms, and fresh red peppers sauce served on a bed angel hair pasta. Isabella Rossellini admits, “I always have parmigiano-reggiano, olive oil and pasta at home. It wouldn’t be Thursday without a little ichthyology: believe it or don’t, the drum’s scientific name is Aplodinotus grunniens. The first word (from the Greek) means “single backed,” but the second word (from a Latin root) is more interesting because it means “grunting.” Yep. Apparently, the mature males “grunt” by vibrating a special set of muscles against the swim bladder during spawningLove in the fish world — must be a fantastic, grunting Thursday during Valentine’s week….

Famous Quotes

Calvin Coolidge wrote, “I have seen so much fiction written on this subject that I may be pardoned for relating the plain facts. We thought we were made for each other. For almost a quarter of a century she has borne with my infirmities, and I have rejoiced in her graces.” Well, ol’ Cal got it right — that whole love business between two people “made for each other” really is an interesting mix of infirmities and graces. Happy Valentine’s Day!

Valentine’s Day Love Pasta 2017

Miracle Max told Inigo Montoya in The Princess Bride, “Sonny, true love is the greatest thing, in the world-except for a nice MLT — mutton, lettuce and tomato sandwich, where the mutton is nice and lean and the tomato is ripe. They’re so perky, I love that.” Well, Inigo looked for a miracle that would solve everybody’s problems. We don’t know about an MLT, just pasta and love. Let us help you have a wonderful Valentine’s Day with a little love from our kitchen to your home — it might just prove miraculous!
